The "weeds" are a curly twisted pasta. I used penne pasta because that is what I had in the pantry. The sauce for this dish consisted of olive oil, unsalted butter, onion, tomato paste, white wine and milk. Sauce with the sausage. I like making sauces with tomato paste and milk. It just gives it a great color and texture.
